What you need
- 1 cups butter (2 sticks)
- 2/3 cup white sugar
- 1 teaspoons almond extract
- 2 cups all-purpose flour
- Bonne Maman Raspberry Preserves
For the Drizzle
- 1/2 cup confectioners’ sugar
- 3/4 teaspoons of almond extract
- 1 teaspoon milk
Baking Supplies
Make the cookies
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together butter and white sugar until smooth.
- Add almond extract.
- Mix in flour until dough comes together.
- Using a medium cookie scoop, scoop out dough and make a round ball.
- Using your thumb (or the handle of make an indentation in each ball
- Bake for 10 minutes until the bottoms are lightly brown
- While still warm, re-press the indented centers with a teaspoon
- Cool completely
Fill the Cookies
- Fill indentations with the raspberry jam
Make the Drizzle
- In a medium bowl, mix together the confectioners’ sugar, almond extract, and milk until smooth.
- Drizzle lightly over cookies.
Tips & tricks
- I always regret not making two batches of these yummies cookies because the recipe doesn’t make enough… especially considering how much Melissa loves them. However, don’t be tempted to simply double the recipe. Make the dough 2 separate times because a doubling is too much for a mixer to evenly distribute the flour and butter.
